How our mum uses garlic in her cooking

My name is Rahat and my mom's name is Nasima. My mom wrote the recipes in this story. Garlic is a spice. It has several white cloves and is very useful for curry dishes.
We grow our own garlic. When they have grown in full we get them, wash them and then we store them in a cool dry place ready for use.
We make lots of garlic pickle and especially use it in daal (lentil soup) and in our sour curries, like tenga (a sour fish curry). A favourite Sylheti dish that my mom makes is Shatkora (citrus based sour fruit), adha (garlic) & lembu (lime) curry. You use a lot of garlic for this dish. My mom also makes Pepe (papaya) bhaji (fried). People say they love my mom's bhaji and they come from all around in the family to eat them.
Pepe Bhaji
Dice a pepe with a botidal (Bengladeshi knife).
Dice one onion with a botidal.
Add 2 diced cloves of garlic.
Add 2 bay leaves.
Add pepe.
Stir for 10-15 minutes until soft.
Eat!
