Cooking rice

Most people in the West don't know how to cook rice properly, they use too much water or cook it too long so it goes all mushy and yeuk. With some rice you must pick it for stones and always wash it, use cold water, till it runs clear three or four waters.
My sister's husband's mother always used to say you should wash rice six times.
Soak it for a little time, then put it a colander or a sieve and drain, then put it in a pan and pour boiling water over it, just as if you were making tea. Stir it a few times to stop it sticking. Keep the lid on tight and a low, low heat for a little while. Look at the rice every so often. When there is hardly any water on the top turn off the heat and keep the lid on, let it stand and your rice will be just right, all light and separate.
